Looking for an easy and super quick Easter recipe that still has that wow factor? This Mini Egg Chocolate Bark is it! It takes barely anytime, only 3 ingredients and there is no baking required!
Don't be surprised if you end up eating it all your self. It's totally delicious(Hello! Mini Eggs!) and pairs so well with the white chocolate. You can definitely use milk or dark chocolate as well and follow the same instructions and ingredients as this recipe but I personally prefer it with white chocolate. It also looks so pretty with the colours.

Ingredients:
- Mini Eggs, I personally prefer Cadbury
- Good quality white chocolate
- Powder or oil based food colouring
- Sprinkles(Optional)
Equipment:
- Baking tray
- Spatula
- Parchment paper or Silpat
- Medium microwavable bowl
- Large Sandwich Bag
- Medium Pan or something heavy
Instructions:
First, line cookie sheet with parchment paper or a Silpat.
Place a ¼ cup of the mini eggs in a sandwich bag and smash them with the bottom of a pan. Keep the rest either whole in halves.
Carefully melt the chocolate in the microwave. Heat in bursts of 20 seconds on medium-high, checking and stirring between. Once chocolate is mostly melted, stir until all remaining chocolate is melted and smooth.
Pour melted white chocolate (reserving quarter cup of chocolate) onto your lined pan and spread evenly with a soft spatula to about ¼" thickness .
Immediately colour the reserved chocolate to your desired colour or colours.
Drizzle coloured chocolate over the white chocolate and gently drag a toothpick through to marble the colours together.
Gently spread all the mini eggs onto the chocolate. Add optional sprinkles or other decorations.
Place in fridge for about an hour to harden. Break up into smaller pieces and enjoy!
