Preheat oven to 350°F. Line two baking sheets with parchment paper.
For the streusel:
In a medium bowl, whisk or stir together flour, brown sugar, white sugar, and salt.
Pour butter over the mixture and use a fork to toss the ingredients together until combined. Don’t over-mix or the streusel will become like a paste, simply toss together until mixture is clumpy, no longer dry, and the flour is completely absorbed.
Pour onto your baking sheet into a think layer and bake for 10 minutes until golden brown. Set aside to cool.
For the peaches:
You can use fresh peaches if you want to save time but I love the roasted flavor of these.
Slice up your peaches and place in a medium bowl. Sprinkle with sugars and cinnamon. Toss to coat fully.
Spread onto your lined baking sheet and bake for 15-20 minutes. Set aside to cool.
For the popsicles:
In a bowl, mix together yogurt, milk and agave/honey.
In your popsicle mold, start with adding a little bit of the roasted peaches, top with the streusel and then the yogurt mixture. Repeat until your popsicle is full. Repeat for as many popsicles as you can fill, should be about 6. Place in the freezer or at least 2 hours or overnight.
