    Rhubarb Shrub - A delicious way to add flavour to your cocktails, seltzers or water. I love the flavour this cooked shrub brings out of the rhubarb. The perfect amount of sweet and tart. I absolutely love shrubs, I find them so easy to make, they last a long time and are great way to up your cocktail game. It's so easy to mix gin, vodka or your preferred liquor with a shrub and just top it off with soda water. It feels fancy and elevated.

    A tart yet sweet rhubarb shrub that can be added to any seltzer or cocktail

    Ingredients
      

    • 1 pound rhubarb chopped
    • 1 cup sugar
    • 1 cup water
    • 1 cup apple cider vinegar

    Instructions
     

    • Add rhubarb, sugar and water to a medium pot and cook on a medium heat for 10-15 minutes or until the rhubarb is broken down and soft. The colour should also be a beautiful pink.
    • Strain the mixture in a large bowl and mix in the apple cider vinegar.
    • Place in a container and refrigerate.

      Thanks for the recipe Taryn. I love a “quick” shrub.
      For others who may try this shrub a few comments:
      -the color of your finished product may be pink, not red. Don’t panic, it’s the variation of the fruit.
      - since this liquid will be stored in the fridge I chose to use just 1/2C of white balsamic vinegar so the flavor of the rhubarb is still present. It’s still safe with less acidity if kept cold and used in a few weeks.
      -don’t toss the strained rhubarb, use it as a refrigerator jam. I added just a dash of cinnamon to mine. It’s so good on toast!
      -I used 1/2 white sugar and have monk fruit “sugar” to lower the calories if the finished product.
