
A delicious classic upgraded with sweeter Meyer Lemon and a savoury twist of sage.

Ingredients:
- Gin of your choice
- Sage
- Meyer lemon juice, freshly squeezed
- Egg white
- Club soda
- Sugar
- Water
- Ice
Equipment:
- Small pot
- Knife
- Cutting board
- Jigger
- Cocktail shaker
- Cocktail Glass, I like a Nick & Nora or Coupe Glass
Instructions:
Sage Syrup
In a small pot, place sugar, water and sage leaves. Bring to a boil over medium-low heat. Let simmer for 5 to 10 mins until sugar is fully dissolved and the liquid is thickened slightly.
Cocktail
Place gin, sage syrup, Meyer Lemon juice and egg white in a cocktail shaker. Vigorously dry-shake(without ice) for about 15 seconds.
Add ice and shake again until chilled.
Double strain into cocktail glass and top with club soda. Cheers!
Note:
The sage syrup will last at least a month in the fridge.

- 2 oz Gin
- 0.5 oz Sage Syrup
- 1 oz Meyer Lemon Juice freshly squeezed
- 1 Egg White
- 1 oz Club Soda
