
You know I love a tropical twist, so why not upgrade a Mojito to a Pineapple Mojito. Grilled pineapple is even better but this one is so easy to make. It's perfect for summer sipping on a patio.

Ingredients:
- Rum, I prefer a darker rum
- Mint leaves
- Pineapple
- Simple syrup
- Lime juice
- Soda water
Equipment:
- Jigger
- Cocktail glass, tall
- Muddler
- Spoon
Instructions:
Add your mint, pineapple, lime juice and simple syrup to your cocktail glass.
Muddle.
Add in the rum and ice.
Top with soda water. Stir and enjoy!

Pineapple Mojito
A tropical twist on a classic. A rum-based cocktail with pineapple, mint and lime.
Ingredients
- 2 oz rum
- 6 mint leaves
- a few chunks pineapple
- ½ oz simple syrup
- 1 oz lime juice
- Top with soda water
Instructions
- Add your mint, pineapple, lime juice and simple syrup to your cocktail glass.
- Muddle.
- Add in the rum and ice.
- Top with soda water. Stir and enjoy!
